This recipe was created to cater to those friends and family. My goal with this recipe was to ensure you don't miss out on any of the bold flavors you get from traditional guacamole.
After making this for friends and family who don't like raw onion, I found that cumin and fresh garlic keep the guacamole from tasting like something is missing. Ingredient Notes

Avocados - we prefer to use Haas avocados
Roma Tomato - not as juicy as other types of tomatoes, making it a great mix-in. You don't have to worry about watery guacamole as much with these.
Garlic - fresh garlic works best. ½ teaspoon garlic powder can be substituted.
Lime Juice - to brighten up the flavor. You can swap for lemon juice if needed.

How to Pick The Best Avocados for Guacamole
Stick with Haas avocados because they have a rich, creamy texture and buttery flavor. They also mash easily while still holding some chunks and contain less water than other avocado varieties.
A ripe avocado should yield slightly to gentle pressure without feeling mushy. Avoid avocados with grey tender spots. If it's too firm give it a day or two to ripen.
To ripen an avocado quickly, place it in a paper bag with a banana or apple. Fold the bag closed and keep at room temperature. Check the avocado daily until you have the perfect texture. Avoid microwave or oven "hacks".
How to Make Guacamole Without Onion Step by Step

Step 1: Slice the avocados in half and remove the pit. Score the avocados with a knife into cubes. Using a spoon, remove the flesh from the rind. Place the avocados in a bowl.
Step 2: Add chopped tomatoes, garlic, lemon, cumin, salt, and cilantro. Stir to combine all the ingredients.
Note: If you're going for more of a chunky casero style, don't overmix just leave it chunky. If you want something creamier, use your spoon to press down on the avocado to mash it and stir more. It will eventually become a nice creamy texture. Serve immediately or refrigerate until serving.
