Olive oil - To add extra flavor to the creamy pasta. I recommend extra virgin olive oil. Try using an infused oil for added flavor like a sun-dried tomato oil or a garlic-infused oil.
Boursin pucks - There are different versions of Boursin. My favorite for this recipe is garlic and fine herbs but the shallot and chive, or even black pepper are great options for this baked boursin pasta recipe. You'll need two blocks of Boursin so feel free to mix up the flavors in the creamy boursin pasta.
Tomatoes sliced - I used juicy cherry tomatoes for this recipe. You can use grape tomatoes or even sun-dried tomatoes. If using sundried tomatoes, I recommend soaking them in water to plump them up before roasting. You can leave the tomatoes whole or slice them. The roasted tomatoes will break down loosening up the sauce a bit and adding a delicious pink color. Other fresh tomatoes can be used such as roma.
Red onion - Any onion will work in this classic recipe. I've made it with yellow, white, and sweet onion. Red onion has been my favorite because of the color it adds to this easy pasta recipe.
Garlic cloves - Fresh garlic is best for this recipe.
Reserved pasta water - Always make sure you're salting your pasta water to enhance flavor in the pasta and to bring the water to a boil faster. This is important when it comes to loosening up the creamy texture to make sure it coats your favorite pasta nicely. I used about a half cup of pasta water but start with a little bit and add more as needed to fit your taste buds.
Salt and pepper - To enhance the flavor of the other ingredients.
Baby spinach - Fresh spinach is such a delicious addition. Add to the casserole dish while the creamy sauce is still hot so it wilts down nicely.
Rotini pasta - I love the shape of the rotini and find that it holds the sauce very well. Feel free to use your favorite pasta for this recipe. Rigatoni pasta and penne are great choices. You can also use gluten-free pasta instead.
Fresh basil leaves - For added freshness over the top.

Step 1. Preheat the oven to 425 degrees.
Step 2. Place fresh cherry tomatoes, red onion, and garlic in a glass baking dish.
Step 3. Create two wells and place the Boursin pucks in the baking dish.
Step 4. Drizzle with olive oil then bake in the preheated oven for 25 minutes.
Step 5. While the Boursin tomato mixture is baking, cook the pasta in a large pot of water according to the package directions—reserve 1/2 cup of pasta water.
Step 6. When the Boursin tomato mixture is done, remove it from the oven and smash the tomatoes and cheese with a wooden spoon. Add the reserved half cup pasta water and spinach. Stir until smooth and creamy and until the spinach has started to wilt.
Step 7. Season with salt and pepper then add the al dente pasta. Mix until well combined. Garnish with fresh basil leaves and parmesan cheese. Serve immediately.
