I also decided to add oats to the recipe to bring more fiber to the dish but in a more subtle way. When it comes to our kids, we to feed them nutritious recipes but they’re picky. With this recipe the oats are hidden within the batter and go unnoticed with every bite. I can’t wait for you to try them.

1 cup flour - this recipe is made with all purpose flour however you can use whole wheat for added nutrients or even gluten free flour as substitutes
1 tablespoon sugar - for a touch of sweetness
2 teaspoons baking powder - gives the pancakes bubbles and makes them light and fluffy
1/2 teaspoon baking soda - also a leavening agent for the pancakes
1/4 teaspoon salt - to enhance the flavor of the other ingredients
1 teaspoon vanilla - for added flavor
2 tablespoons vegetable oil - you can substitute canola oil
3/4 cup plus 2 tablespoons milk - any milk can be used in this recipe, make it vegan by substituting almond or oat milk.
1 teaspoon white vinegar - breaks down the starches and proteins in the batter helping with a good rise and making the pancakes nice and fluffy
1/2 cup rolled oats - whole oats are used in this recipe but quick oats can be used as well

How to Make Healthy Oat Pancakes Without Egg
Step 1. Add flour, baking powder, baking soda, salt, sugar, and oats to a medium sized bowl. Whisk together until fully combined.
Step 2. In a separate medium bowl, whisk together the oil, milk, vanilla, and vinegar. Stir the dry ingredients into the wet ingredients. Do not over mix. it’s okay if your batter still has a few small lumps.
Step 3. Heat a large nonstick skillet over medium heat. Add a splash of oil to the skillet just enough to keep the pancakes from sticking. Or you can spray the skillet with cooking spray.
Step 4. Add 1/4 cup of the pancake batter to the heated skillet. Cook until the surface of pancakes have bubbles and the sides have started to cook and stiffen. Carefully flip the pancake using a spatula and cook until browned on the other side. About 1-2 more minutes.
Step 5. Remove the healthy oatmeal pancake from the skillet and set aside. Repeat with remaining pancake batter. Serve the healthy pancakes without eggs with butter, maple syrup, and or fresh berries.

So are these oatmeal pancakes without eggs are almost vegan. They don’t have eggs but they do call for milk. However, I didn’t specify what type of milk could be used. Making this vegan is super easy because you can use almond milk, oat milk, soy milk, or any type you like!
