This cozy chicken dinner combines is roasted with flavors of orange, cranberry, and rosemary infused in the chicken. Together the flavors create a sweet, savory, and citrusy dinner that you can enjoy around the holidays.
There are only six ingredients in this delicious roasted chicken dinner and chances are, you probably have most of them laying around. On top of that, there’s very little prep time. I like to make this around the holidays because I usually have left over cranberry sauce and I’m all about using up leftovers in fun and creative ways like this one.
One thing I’ve noticed over the years is that everyone makes their cranberry sauce differently. Some people make it homemade and others buy it from the supermarket. Some like the gelled while others like a relish. The good news is that you can use the gelled cranberry or the relish in this recipe. I have used both and they work out well.
What makes it zesty?
When cooking, it’s important to balance the flavors between sweet and salty. Too much of one could ruin the dish. To bring some balance and offset the sweetness of the cranberry and orange, I decided to add a dry italian seasoning packet. This is coated on the top of the chicken after the sauce is added. It’s sweet and salty with flavors of garlic, onion, and herbs. It adds a whole new layer to this delicious cranberry orange chicken with rosemary.
It’s really simple
The simplicity of this chicken dinner perfect for a weeknight dinner. It’s literally a matter of combining three of the ingredients in a bowl, whisking them together to create a sauce and then pouring that over top of the chicken and rosemary. Then topping the chicken and rosemary with the italian seasoning packet and baking for around an hour.
When the chicken is done baking the cranberry orange sauce can be served over top of the chicken making a nice sweet and savory sauce keeping the chicken moist. The sauce can also be used to top any vegetables served along with this yummy dish! Now let’s get on to the recipe.
Zesty Cranberry Orange Chicken with Rosemary
Ingredients
- 4 boneless skinless chicken breasts
- 1 italian seasoning packet
- 1/4 cup orange juice
- 1 tablespoon balsamic vinegar
- 1 cup cranberry sauce
- 2 strands of fresh rosemary
Instructions
- Preheat oven to 375
- Place chicken breasts at bottom of pan, season with salt and pepper, add rosemary.
- In a small bowl combine the orange juice, balsamic vinegar, cranberry sauce and whisk until well combined. Pour over the chicken. Top with the italian seasoning packet
- Cover with foil and bake for 30 minutes, flip the chicken and continue cooking for an additional 20-30 minutes uncovered until the chicken is cooked
