They’re full of Oreos from the inside out. If you’re an Oreo lover, this is for you. There's a layer of Oreos in the middle and crushed Oreos top each bar with a creamy glaze.
If you love baking you may already have many of these basic ingredients on hand
The brownies and cookies are made completely from scratch. Together they are combined to make bars that are soft, chewy, and so good. It's hard to have just one.
What Is an Oreo Brookie?
So what exactly is a brookie? A brookie is a brownie cookie dough fusion recipe that combines a brownie and a cookie together making one dessert that has the best of both worlds. This Oreo brookie starts with a chocolate chip cookie layer on the bottom. The cookie dough is spread evenly into a baking dish creating one big cookie layer.
Then the cookie dough is topped with a layer of whole Oreo cookies. This is my favorite part because as the brookies are cut into squares you can see the cookie layer in the middle!
Next, the brownie layer is placed on top of Oreos. Then crushed Oreos are placed over top of the brownie layer. So there’s a total of four layers in each bar. Then the bars are topped with a creamy sweet drizzle made from milk and powdered sugar. Yes it sounds like a lot but it's so good and so worth it! The total recipe prep time is about 1 hour if you're cleaning as you go.
Doesn’t Oreo Make Brookies?
Oreos actually came out with a limited edition cookie called the Oreo Brookie-O Brownie. The Oreo brookie release date was actually in January 2021. The brookie Oreo had three layers. First was a brownie layer, then the traditional creamy layer, then the cookie layer at the bottom. The brookie Oreos made in this recipe are loosely based on that popular snack!
What Do You Need to Make This Oreo Brookie Recipe?
You might look at the ingredients list below and think wow that's a lot. I promise it's not. Many of the ingredients below are listed twice. Below is a consolidated list of everything you’ll need.
Butter - choose unsalted, the brownies require melted butter while the cookies require it to be softened instead. You'll need a total of 1 cup unsalted butter for this recipe
Chocolate chips - these are used in both the brownies and the cookies because the more chocolate the better. I use milk chocolate chips in this recipe but you’re welcome to use dark chocolate if that's what you prefer
Sugar - two types are used. Granulated is used in both the brownies and the cookies. Light brown sugar is used in the cookies to make them soft and chewy.
Cocoa powder - used to give brownies their deep dark color and flavor, choose unsweetened cocoa powder to avoid too much sugar
Vanilla Extract- used in both the cookies and the brownies to enhance the flavor
Salt - just a little is used in both, you will find salt in most baked recipes because it is used to strengthen the gluten in the flour
Egg - used in both the brownie and cookie batter, more is needed for the brownies. Try to use room temperature eggs for the best results
Flour - all purpose flour is best for this recipe
Baking powder and soda - these are only used in the cookies
Oreos - of course you can’t make Oreo brookies without Oreos!
Powdered Sugar - used to make the glaze over top
Milk - also used to make the glaze
How to Make Oreo Brookies
My biggest advice to you when making these is to do one thing at a time and to clean as you go. Something I try to avoid is using more dishes than I need to so I don’t have to deal with a big mess when I’m done. If you’re not mindful of that then you may be left with a pretty messy kitchen to clean up.
For this, I use an electric mixer for both the cookies and the brownies. When the cookies are done I clean out the mixing bowl then start prepping the brownies. Same with mixing bowls. You’ll save yourself if you do this! Now let's talk about how to make a brookie.
Step 1. Preheat the oven to 350 degrees and spray a 9x13 inch baking dish with cooking spray to keep the cookies and brownies from sticking. Don't have cooking spray? You can always line with butter or with parchment paper. Parchment paper is a great idea because it lifts right out of the baking dish when you're done!
For The Cookies
Step 2. Adding butter, granulated sugar, and brown sugar to a mixing bowl. Cream all ingredients together with an electric mixer until well combined.
Step 3. In a separate large mixing bowl add the flour, baking soda, baking powder, and salt. Mix until well combined. Then fold the dry ingredients into the bowl with the wet ingredients and stir until well combined.
Step 4. Fold in the chocolate chips. Add the chocolate chip cookie dough to the baking dish spreading evenly on all sides making sure the bottom is covered. Once done, add a layer of whole Oreo cookies on top of the cookie dough layer.
For The Brownies
Step 5. In a clean electric mixing bowl add melted butter and cocoa powder. Stir well. Add granulated sugar, brown sugar, salt, then eggs. Whisk on high for about 3-4 minutes until the batter becomes glossy.
Step 6. Add flour and mix until just combined. Add chocolate chips and stir well. Scrape down any excess batter from the sides. Pour the batter over the cookie dough and Oreo cookies evenly.
Step 7. In a bag crush the remaining Oreo cookies into smaller pieces. Pour the Oreo pieces over the brownie batter evenly. Cover with foil and place in the oven for 20 minutes. Once done remove the foil and cook for an additional 20-25 minutes or until a tooth pick comes out clean. Let cool completely before adding the glaze.
Make The Glaze
Step 8. While the bookies are cooking make the glaze by combining powdered sugar and milk in a small bowl until smooth. After the brookies have cooled, pour the glaze over top and let set. Then cut the brookies into squares.
Tips For Making The Best Oreo Brookies
- If you want glossy and shiny brownies you’ll need to beat the eggs and sugar together very well
- Use room temperature eggs for better results. Room temperature helps create a more uniformly textured batter.
- Don’t forget to spray the baking dish before adding the batter otherwise you'll get sticking and it will be a pain to take out
- I know it's hard but wait until the brookies have cooled completely before removing from the pan and before adding the glaze over top. You can facilitate the cooling process by placing the baking dish on a cooling rack.
- Try using dark cocoa powder in the brownies to make a batter that’s rich and delicious
- Don't over mix the brownie batter to avoid a tough, chewy texture. Mix until just incorporated for the best results.
- Don’t over bake the Oreo brookies. See below on how to know when the brookies are done. Over baking can cause the dessert to be dry and too crumbly.
- Use a clear baking pan. This isn’t totally necessary but using a clear baking dish will allow you to not only see the delicious layers as the batters cook but you'll be able to make sure the brownie batter is evenly dispersed on all sides. You'll also see as the cookie dough begins to brown as it bakes.
Different Variations You Should Try
I love to get creative when I may dessert. With baking there's a lot of room for creativity especially when it comes to the flavor. Below I’ve listed a few ways you can adjust this recipe and make it your own. Let me know if you end up trying any of these.
- Add nuts - I love adding walnuts or pecans to brownies and even cookies. You could simply fold in a few of your favorite nuts for that added crunch or substitute the chocolate chips for nuts all together!
- Try butterscotch morsels chips in place of chocolate chips for a rich, butterscotch flavor that will compliment the Oreo brookies very nicely. You could even add these in addition to the chocolate chips if you wanted to.
- For the brownie batter, melt the chocolate chips and stir into the batter creating a nice fudgy flavor and texture. It will take the level of chocolate that's in this dessert to a whole new level.
How Do I Know When Oreo Brookies Are Done?
So how do I know when the Oreo brookies are done? It’s not as easy as sticking a toothpick in and having it come out clean because there are two types of batters and they’re separated by an Oreo cookie. Because of this, the brookies have to cook with foil and then without.
The way I know the chocolate chip cookies are done is because as they cook you'll see them starting to brown at the bottom. For the brownie batter I use a toothpick, when I pull it out I’m looking for a texture that's slightly gooey but not wet. As the brookies sit they will stiffen and settle.
Storing Oreo Brookies
The Oreo brookies can be kept in an airtight container at room temperature for up to a week. They can also be frozen for up to 3 months. Be sure to thaw completely before eating.

For The Cookie Dough
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- 1 egg
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/3 cups all purpose flour
- 1 cup chocolate chips
- 1 14.3 oz package of regular oreos
For The Brownie Batter
- 1/2 cup unsalted butter melted
- 3/4 cup chocolate chips
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/3 cup cocoa powder
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup flour
- 1/2 cup chopped oreos
For The Glaze
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
For The Cookie Dough
- In an electric mixer combine butter, granulated sugar and brown sugar. Cream together until well combined. Add vanilla extract and egg. Mix until combined.
- In a separate large bowl combine salt, baking powder, baking soda, and flour. Mix until well combined.
- Stir the dry ingredients into the wet ingredients and mix until combined. Fold in 1 cup of chocolate chips.
- Add the cookie dough mixture to your baking dish. Press down and cover the bottom of the dish.
- Line the cookie dough with whole oreo cookies
For The Brownies
- In a clean electric mixer, add melted butter, and cocoa powder. Stir together. Add granulated and brown sugar, salt, then eggs. Whisk on high for about 3-4 minutes until the batter starts to look nice and glossy.
- Add the flour and mix until almost combined. Add chocolate chips and stir well. Be sure to scrape down the side of the bowl to get any remaining flour, etc.
- Pour over top of the oreo cookies and cookie dough
- In a bag, add the remaining oreos and crush into smaller pieces using your hands. Pour in an even layer over top of the brownie mixture
- Cover with foil and bake for 20 minutes. Remove the foil then bake for an additional 20-25 minutes or until a toothpick comes out clean. Let cool completely before adding the glaze

- In a small bowl combine the milk and powdered sugar. Whisk together until the glaze is formed. Drizzle over the oreo brookie before slicing.
