What is Biscoff?
Biscoff, also known as Speculoos, is a type of spiced shortcrust biscuit or cookie that originates from Belgium. It's characterized by its distinctive flavor profile, which includes a blend of warm spices like cinnamon, nutmeg, and cloves.
Biscoff spreads and creams, which are essentially a spreadable version of the cookie, have become especially well-known and are often used as an alternative to nut butters or chocolate spreads.
Ingredients
Rolled oats - The oats make up the bulk of the sweet protein balls. It's packed with fiber and other minerals and nutrients. They're mixed into a fine texture in the food processor with all the other ingredients to form the protein balls.
Plant based vanilla protein - While the other ingredients have a little protein, this is where the bulk of it comes from. I suggest using vanilla because the flavor will pair well with the biscoff flavors. However, peanut butter and pumpkin spice may add delicious flavor as well.
Biscoff spread - This ingredient pulls all the ingredients together. If you're not familiar with cookie butter, it has a texture very similar to peanut butter. The flavor on the other hand are all identical to that of a biscoff butter cookie.
Maple syrup - Adds extra sweetness to the protein balls and makes the mixture more moist. This helps to bring the ingredients together nicely, working as a binding agent Honey or agave nectar can be substituted.
Cinnamon - The biscoff flavors already include cinnamon but I wanted to enhance these flavors. Adding almond milk, oats, and protein can mute these flavors out a little bit. You could even try pumpkin spice around the fall for a more diverse blend of the spices.
Almond milk - Used to moisten the batter because it can get too dry. Use this to your discretion once done. Add only a little bit at a time to get the texture you're looking for.
Crushed biscoff cookies (optional) - Used to coat the outside of the protein balls once they're formed. This adds a bit more crunch to the outside and finishes the balls with even more of that biscoff flavo
Toasted coconut - To coat the outside of the protein ball and add even more texture and flavor.
Chocolate sauce
Butter or coconut oil melted - Brings together the chocolate sauce allowing it to solidify on the protein balls without making a huge mess.
Powdered sugar - To sweeten the chocolate sauce, it also thickens the sauce nicely.
Cocoa powder - You can't have a chocolate sauce without cocoa powder. Try cacao instead of cocoa for a healthier alternative.
Water - To thin out the mixture as needed.
How They're Made
Step 1. In a food processor add the rolled oats, protein powder, biscoff spread, maple syrup, cinnamon, and almond milk. Blend until combined and the texture can easily be rolled into balls.
Step 2. Roll the biscoff protein mixture into small balls and set aside on a plate. Optional: Roll the balls onto crushed biscoff cookies for added texture and flavor.
Step 3. Cover the plate with plastic wrap and place the protein biscoff balls into the refrigerator to let set.
Make the Chocolate Sauce
Step 4. In a small bowl melt the butter. Stir in the powdered sugar, and cocoa powder. As the mixture thickens, stir in 1 teaspoon of water at a time to thin the sauce enough to be drizzled.
Finish the Protein Bites
Step 5. Remove the protein bites from the fridge. Drizzle the chocolate sauce over the top. Then, top with toasted coconut. Refrigerate until ready to eat.
Do you need a food processor for this recipe?
While a food processor can be a convenient tool for making the Biscoff protein balls recipe, it's not totally necessary. You can use a high speed blender instead. Keep in mind that it might require a bit more scraping ensure even blending compared to a food processor. The texture may also vary slightly.
Mix in Ideas
One way to customize these biscoff energy balls and take them to the next level is by adding mix-ins. Below are some of my favorite mix-ins. Let me know if you try any of these.
