Ingredient Notes and Substitutions
Shredded Seasoned Chicken - We love using shredded rotisserie because it's quick and convenient. If you have a little extra time I highly recommend using my Dutch Oven Pulled Chicken in this recipe because it's SO juicy and flavorful.
Grapes - We love using purple grapes but black or green work great as well. If you don't have grapes on hand you can add dried cranberries.
Celery - This adds the perfect crunch to the chicken salad. I highly recommend adding some chopped celery leaves for enhanced flavor and color.
Green Onion - Be sure to use the green portion of the onion. Fresh chives can be substituted for added color.
Greek Yogurt - We use plain Greek yogurt but low-fat yogurt can be substituted.
Dijon Mustard - Adds the perfect tartness to the dressing. Spicy brown mustard or stone ground mustard are great substitutes.
Maple Syrup - This is our go-to sweetener. Agave or honey can be substituted.
Apple Cider Vinegar - White vinegar can be substituted.

Ingredients
- 1 lb seasoned shredded chicken
- 1 cup washed and sliced grapes
- 2 stalks celery
- 1 green onion
- 1/2 cup pecans
- 1/2 cup chopped red onion
The Dressing
- 5.3 oz container or 1/2 cup plain greek yogurt
- 2 teaspoons dijon mustard
- 1 tablespoons maple syrup
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon onion powder
- 1 teaspoon poppyseeds
- salt and pepper to taste
Instructions
- In a small bowl combine all the ingredients to make the dressing. Stir well until fully combined.
- Place the chicken, grapes, celery, onion, pecans, and red onion into a medium bowl.
- Add the poppyseed dressing to the chicken mixture. Stir until well combined. Serve immediately or refrigerate for later.
