2-3cupsseasoned shredded chickentry using rotisserie chicken for added flavor
1cupwashed grapescut into halves
2stalks celeryabout 1 cup
1green onion
½cuppecanstoasted for the best flavor
½cupchopped red onion
The Dressing
5.3ozcontainer or ½ cup plain greek yogurt
2teaspoonsdijon mustard
1tablespoonsmaple syrup
1teaspoonapple cider vinegar
½teaspoononion powder
1teaspoonpoppyseeds
salt and pepper to taste
Instructions
In a small bowl combine all the ingredients to make the dressing. Stir well until fully combined.
Place the chicken, grapes, celery, onion, pecans, and red onion into a medium bowl.
Add the poppyseed dressing to the chicken mixture. Stir until well combined. Serve immediately or refrigerate for later.
Notes
Storage: Keep in the refrigerator for up to 3-5 days. Don't freeze. Serve with whole grain bread, between two halves of a croissant, on your favorite crackers, or alone.
