Best Ever Oreo Brookies

Oreo brookies are rich, chocolatey, and are full of Oreo goodness. Each bar has a layer of chocolate chip cookie, Oreo, and brownie then they are topped with crushed Oreos and a creamy glaze. Easy to make with ingredients you probably already have on hand. It’s the ultimate dessert for those who can't decide between a brownie and a cookie.

Ingredients
  

For The Cookie Dough

  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/3 cups all purpose flour
  • 1 cup chocolate chips
  • 1 14.3 oz package of regular oreos

For The Brownie Batter

  • 1/2 cup unsalted butter melted
  • 3/4 cup chocolate chips
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup chopped oreos

For The Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions
 

For The Cookie Dough

  • In an electric mixer combine butter, granulated sugar and brown sugar. Cream together until well combined. Add vanilla extract and egg. Mix until combined.
  • In a separate large bowl combine salt, baking powder, baking soda, and flour. Mix until well combined.
  • Stir the dry ingredients into the wet ingredients and mix until combined. Fold in 1 cup of chocolate chips.
  • Add the cookie dough mixture to your baking dish. Press down and cover the bottom of the dish.
  • Line the cookie dough with whole oreo cookies

For The Brownies

  • In a clean electric mixer, add melted butter, and cocoa powder. Stir together. Add granulated and brown sugar, salt, then eggs. Whisk on high for about 3-4 minutes until the batter starts to look nice and glossy.
  • Add the flour and mix until almost combined. Add chocolate chips and stir well. Be sure to scrape down the side of the bowl to get any remaining flour, etc.
  • Pour over top of the oreo cookies and cookie dough
  • In a bag, add the remaining oreos and crush into smaller pieces using your hands. Pour in an even layer over top of the brownie mixture
  • Cover with foil and bake for 20 minutes. Remove the foil then bake for an additional 20-25 minutes or until a toothpick comes out clean. Let cool completely before adding the glaze

For The Glaze

  • In a small bowl combine the milk and powdered sugar. Whisk together until the glaze is formed. Drizzle over the oreo brookie before slicing.
