Guacamole Without Onion is a fresh and flavorful 10-minute dip made with ripe avocados, tomato, lime, garlic, cilantro, and cumin. It’s creamy, easy to make, and full of flavor without the strong taste or crunch of raw onion.
Slice the avocados in half and remove the pit. Score the avocados with a knife into cubes. Using a spoon, remove the flesh from the rind. Place the avocados in a bowl.
Mash the avocados with a fork to your desired texture.
Fold in chopped tomatoes, garlic, lemon, cumin, salt, and cilantro. Stir to combine all the ingredients. Serve immediately or refrigerate until serving.

Preparation Note: If you’re going for more of a chunky casero style, don’t overmix. If you want something creamier, use your fork to press down on the avocado to mash it and stir more. It will eventually become a nice creamy texture.Storing:Smooth the guacamole into an airtight container so the surface is relatively flat. Add a thin layer of fresh lime juice over the top and cover tightly. You can also press plastic wrap directly against the surface before adding the lid to minimize contact with air. Keep in the refrigerator for up to 1-2 days for the best results.Tips:
Choose an avocado that's firm but yields slightly to gentle pressure without feeling mushy. Avoid avocados with grey soft spots.
Ripen an avocado quickly by placing it in a paper bag with a banana or apple. Fold the bag closed and keep at room temperature. Check the avocado daily until you have the perfect texture. Avoid microwave or oven "hacks".
Mash before adding the mix-ins.
Don't overmix. Stop when you still have some small avocado chunks if you want restaurant-style texture.
