This avocado toast is piled high with egg, bacon, green onion, and topped with lemon juice. This whole food breakfast is the perfect way to start your day.

Avocado toast has been popular for so long and there are so many great ways to make it. My favorite way lately is to add bacon and egg. Egg and bacon are staples when it comes to breakfast. When you add it to avocado toast, you get an even better breakfast that’s loaded with all the breakfast favorites.
The Ingredients
The ingredients are simple and whole. It’s a meal that will give you the energy to take on your day. This recipe is also a starter recipe, in other words if you like to add other ingredients to your avocado toast or have something on hand that you want to use, use it!
Whole Grain Bread - We love whole wheat and whole grain bread, stay away from white bread which are not as nutritious. Toast the bread before layering on the ingredients to add another element of crunch and won’t get soggy with all of the ingredients.
Avocado - When choosing your avocado make sure it’s firm but not too firm. Stay away from those with ultra-soft spots which could indicate browning on the inside.
Turkey Bacon - We choose turkey bacon in our home because it’s lower in fat and tastes great. Turkey bacon is one of those things that people either love or hate. If you would rather use regular bacon, do that instead.
Boiled Egg - Boiled eggs are super nutritious, in this recipe we remove the yolk and chop the egg white and throw that on the avocado toast. You can keep the yolk if you want to.
Lemon Juice - Fresh lemon juice isn’t replaceable. This takes it to the next level and brightens the flavor. One tip I have is before slicing open your lemon, roll it on the counter to release the juices.
Green onion - This is one of my favorite garnishes. I recommend always having these on hand because they go great over anything. Store any left over in the freezer for up to 2-3 months. If you want to replace the green onion with herbs such as parsley or dill, go for it!
When To Make This Avocado Toast
The best time to make this avocado toast is any time! We love making this recipe for breakfast, brunch, and lunch. It’s a light meal that leaves you satisfied but not overly full.
This is probably not a meal that I would meal prep since avocados will start browning shortly after they’re opened. The lemon juice would also make the bread soggy the longer it sits. With all that being said, the best time to make this is when you’re read to eat it. The time of day does not matter at all!
What Are The Benefits?
The benefits to this avocado toast with egg and bacon are plentiful. The avocados alone are a great source of vitamins C, E, K, and B6 as well as riboflavin, niacin, folate, and more. They’re also high in healthy, beneficial fats which contribute to you feeling fuller longer after you eat.
The egg whites are also very nutritious and full of vitamins and nutrients much like avocados. They don’t have the fat and cholesterol that the yolk has which is why we like to omit the yolk in this recipe.
When it comes to topping your avocado with lemon juice, be generous. This ingredient promotes weight loss, helps blood sugar, and is full of vitamin C. It’s vital in preventing many diseases when eaten regularly. This is a must have ingredient!
How It’s Made
So how is this avocado toast with bacon and egg made? It’s super simple! It’s all about layering the ingredients on each other. You’ll want to start with whole grain bread, toast it in the toaster while you’re prepping your other ingredients.
To prep your other ingredients you’ll want to start with your peeled, sliced avocado. I arranged the slices beside each other. If you prefer avocado chunks you can chop them instead. Go ahead and cook one slice of bacon, let it cool, and break into smaller pieces. Peel your boiled egg, slice in half, and remove the yolk and chop the egg white into smaller pieces.
Once your toast is done, layer on your avocado, bacon, chopped egg, salt and pepper to taste, lemon juice, and green onion. Serve immediately! It’s really that simple. You’re going to love this recipe.
