Add vegetable broth, almond milk, yellow potatoes, chickpeas, turmeric, and italian seasoning. Bring to a boil.
4 cups vegetable broth, 1 cup unsweetened original almond milk, 2 cups chopped yellow potatoes, 1 can chickpeas, ½ teaspoon turmeric, 1 teaspoon italian seasoning
Once the soup has reached a boil, cover and reduce heat to medium to allow the soup to simmer for 7-10 minutes or until the potatoes can be pierced with a fork easily.
Add broccoli and continue to simmer for 2-3 minutes or until bright green and tender.
3 cups broccoli florets
Once the broccoli is cooked, remove from heat. Stir in lemon juice and nutritional yeast. Taste then season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.
