Bring a pot full of water and a pinch of salt, bring to a boil and cook the penne according to the package directions.
Heat 2 tablespoons of olive oil in a skillet over medium heat. While the oil is heating season the chicken breast on all sides with salt and pepper, paprika, italian seasoning, and garlic powder.
Place the chicken on the skillet and cook for about 4-5 minutes on each side until the chicken is fully cooked. Remove the chicken from the skillet and set aside.
Add the onion and garlic to the skillet and sauté in the remaining chicken juices. Add more oil or a touch of chicken broth if needed. Cook until the onion starts to turn translucent. Once done deglaze the pan with vodka and stir for a few seconds allowing the alcohol to cook off.
Add tomato paste, crushed tomatoes, and heavy cream. Bring to a light simmer and cook for about 3-5 minutes or until the sauce has reduced and thickened. Once done, stir in the penne and top with parmesan cheese and fresh basil
