The Fluffiest Avocado Waffles

Light and fluffy avocado waffles are easy to make and are loaded with fresh, creamy avocados. This kid friendly breakfast only takes 15 minutes to make! Serve now or freeze for later.

Ingredients
  

  • 2 tablespoon granulated sugar
  • pinch of salt
  • 1 avocado peeled pitted, and flesh scooped out
  • 1 cup almond milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoon baking powder

Instructions
 

  • In a blender combine sugar, salt, avocado, almond milk, eggs, and vanilla. Blend until smooth.
  • In a mixing bowl add the all purpose flour and baking powder.
  • Stir in the blended wet ingredients to the dry ingredients and mix together until just combined.
  • Prepare your waffle iron by preheating and spraying the iron. Once heated, add 1/2 cup of waffle batter and use a spoon to spread evenly into the waffle iron. Close the iron and cook until the iron says your waffles are done. Remove and serve with fresh fruit.
