Roasted to perfection and tossed in a mouthwatering Thai-inspired sauce, these Thai brussel sprouts captivate the palate with a harmonious blend of sweet, savory, and spicy notes.
This recipe surprised me. Typically I season my brussel sprouts with garlic, oil, salt and pepper before baking. Sometimes I'll try adding balsamic vinegar like in These Balsamic Garlic Roasted Brussel Sprouts or maybe pair them with other veggies like in my brussel sprouts with asparagus recipe.
This time I wanted to try something different by seasoning the brussel sprouts very little and then tossing in a vibrant, flavor packed sauce. This sauce is inspired by Thai cuisine, which I've been loving lately. It's fresh, healthy, and packed with flavor from the lime juice, thai chilis, and fish sauce. You get the perfect balance of sweet, savory, and spicy elements in every bite. If you're looking for a way to take brussel sprouts to a whole new level, you'll love this recipe!

Ingredients
3 cloves garlic minced - fresh garlic will be best for this recipe. Yes fresh garlic can be potent when it's not cooked but the lime juice in the sauce will take it down a notch so you can enjoy the flavor without the overwhelming kick
1 thai chili chopped - chilis with smooth flesh are going to be more mild than those that are wrinkled. Don't have a thai chili but want some extra heat? Add some red pepper flakes instead.
2 tablespoons fish sauce - choose a high quality fish sauce for the best flavor. Don't have fish sauce? Oyster sauce or soy sauce can be substituted
1 1/2 tablespoons sugar - I used granulated sugar for this recipe, palm sugar or maple syrup can be substituted
1 lime squeezed - choose a bigger and more plump lime for this recipe so you get the most juice
2 tablespoons cooking oil - I opted for vegetable oil or canola oil instead of olive oil so the flavor wouldn't be overpowering and it wouldn't interfere with the flavor of the sauce
1lb brussel sprouts washed and halved - see below on how to choose the best brussel sprouts for this recipe
Salt to taste - just a pinch will do because the fish sauce is pretty salty on its own
How to Choose The Best Brussel Sprouts
When it comes to buying fresh brussel sprouts there are a few things to look for. You can buy the brussel sprouts pre-packaged and prepped but keep in mind you'll need to use them relatively quickly because they won't last as long. If you're buying fresh below are a few tips I have to ensuring you get the best ones!
Size: Look for Brussels sprouts that are medium to small in size, as they tend to be more tender and flavorful. Avoid sprouts that are overly large or have started to open up since they aren't typically as sweet.
Firmness: Gently squeeze the Brussels sprouts to check for firmness. They should feel compact and firm to the touch. Avoid sprouts that feel soft or have a spongy texture, as they may be less fresh.
Color: Choose Brussels sprouts that have a vibrant, deep green color. Avoid sprouts with yellow or brown spots, as it could indicate that they are past their prime or have started to deteriorate.
Leaves: Check the outer leaves of the sprouts. They should be tightly packed and free of browning or wilting. Fresh and healthy Brussels sprouts will have intact and crisp leaves.
Stalk: Some Brussels sprouts are sold still attached to the stalk. While this doesn't necessarily indicate quality, it can be a sign of freshness as they are harvested and sold as a whole. If possible, select sprouts that are still attached to the stalk for a longer shelf life.
Seasonality: Brussels sprouts are typically in season during the fall and winter months. Choosing them during their peak season increases the chances of getting the freshest and most flavorful sprouts.
